That sticky stuff that has been on our burgers and in our bellies for all of these years, regardless of how much we paid for it, and no matter how thick it was cut, isn't "gourmet" bacon.

Big Pepper Bacon

Our Big-Pepper bacon has all of the flavor that Piper Nigrum has to offer. We use a house-blended and ground mix of the finest imported peppers available. The mix is lovingly (and liberally) applied to the exterior of our classic cure bacon and becomes part of the pellicle (the pellicle is a tacky outer edge that helps protect the bacon) on the day prior to smoking. We then cold-smoke Big-Pepper with local hickory and apple woods to bring out all of amazing tastes that you expect from us. Whether you use it thick-sliced on a perfect burger, wrapped around a petite filet mignon, or sliced into lardons and mixed w/ pasta carbonara, we are certain you’ll be back for more.

Cherry Bomb *NEW*

Slowly smoked over smouldering cherry wood, this delicions bacon is a flavor-lover's delight. Hints of red pepper and imported cinnamon from Madagascar accent the soft and slightly sweet smoke of the cherry wood. The bacon is wonderful anytime, from breakfast to sandwiches. We've even used it on a sundae!

Maple and Muscovado (M2)

M2, short for "Maple and Muscovado," is for the sweet-and-savory lovers. Our maple flavoring is an all-organic maple syrup (organic agave syrup is also available if you want a lower glycemic index). Muscovado sugar is a natural, organic, unrefined imported brown sugar with dark, rich notes and hints of molasses.. These ingredients are used both during the cure process (along with other fresh, house-ground spices) and during pellicle formation to create a candied exterior to the bacon, with a perfect sweet/savory flavor within. Delicate applewood is used to cold smoke this specialty. The layers of flavor are as endless as the dishes this will complement!

Signature

Our Signature series bacon will find a spot on your short list as soon as you take the first bite. Dry-cured with a mix of fennel seed, caraway, rosemary, thyme, marjoram, pepper, and garlic, this bacon is a fantastic gourmet treat. After curing, the bacon is then cold-smoked using a secret selection of famed Pennsylvania hardwoods. Use this as a stand-alone or as a compliment to many seafood and meat dishes.

Buffalo-style

Not buffalo meat, mind you, buffalo flavor; as in Buffalo, NY, home of hot wings, first prepared at the Anchor Bar by Teressa Bellissimo (if the legends are true). Here we bring you that classic flavor profile, both inside and out, in some of our finest premium smoked pork belly. We bring the heat but it doesn't overwhelm; coated with Bespoke's super-secret wing sauce along with a blend of organic herbs and house-ground spices during the cure. Next we double-smoke the bacon over a 2-day span with hickory. Try lardons of this served with blue cheese on the side, mix it into a salad of fresh greens, or email us for the recipe to our ultimate buffalo burger, you won't be disappointed.

SEASONAL FLAVORS

Jamaican Jerk

A unique wet marinade and cure made up of hot habanero and Scotch bonnet peppers will bang on your taste buds like steel drums! This fiery flavor is so so good, you'll want to use it all through the year. a unique mix of cloves, nutmeg, thyme, and garlic give the flavor a sweet balance for any dish that needs a little kick. Use this to top a burger or wrap around a nice bone-in pork chop before grilling to really give your guests a treat.

Bloody Mary

One of the world's most poular cocktails, Bespoke Bacon is happy to re-create the symphony of flavors you've come to expect from the delicious drink. Worcestershire sauce, Tabasco, piri piri sauce, horseradish, celery, olive, salt, black pepper, cayenne pepper, lemon juice, and celery salt, and smoked using a blend of hickory and apple woods, the flavors combine to give a perfect balance for that late morning breakfast or early afternoon snack. This recipe is perfect for a brunch BLT, or cracked over bleu cheese wedge salad.

Honey Apple

It is as if a merger of delight occured: our honey-apple flavor combines the sweetness of honey-baked picnic ham with the salty bite of a perfectly cured bacon. We use a unique blend of real 100% natural honey, Demavera sugar, organic maple sugar, cinnamon, paprika and real apple juice in the cure, then slowly smoke over a blend of Pennsylvania fruit and hard woods including oak and apple wood.

Volcano *NEW*

Not for the faint of heart. This special production, which we only make to order, is a 5-alarm combination of Indian Bhut Jokolia (commonly called Ghost Pepper); Chocolate 7-Pot Douglah, and Moruga Scorpion Pepper. That's right - the three hottest peppers in the world. The bacon is cured with sea salt and dark brown sugar and slowly smoked so the pepper can absorb all of the wonderful flavor.

Jalapeno-Cilantro

Jalapeno-Cilantro flavors merge wonderfully into a bacon that is both meaty and salty with sweet and hot undertones. It is a teriffic balance of fresh garlic, cilantro, real jalapenos, and brown sugar, cured for 7-10 days and then fired over smoldering wood to bring out the toasted pepper flavor. The smell of this flavor cooking brings people running to the kitchen in anticipation!

Szechuan Style

The Szechuan province of southwest China is known for bold, flavorful food. We take the regional ingredients of Shaoxing wine, Szechuan peppercorns, star anise, garlic, and ginger to produce a bacon that is truly unique. This bacon has an intense, fragrant flavor that is sure to produce wonderful sensations of smell and taste.

Custom Flavors

In addition to our standard flavors, Bespoke Bacon is pleased to offer you an endless variety of flavorings for your enjoyment. We will work with you to develop a custom flavor for your restaurant or catering facility, or even just for you!

There is a minimum order (by lbs) for custom bacon. Price depends on the aging, ingredients, and wood chosen for the product. Since we are custom curing the bacon for you, expect 2-3 weeks for delivery.
